The present study was conducted on 78 milk samples collected from MILCO (Pvt.) Ltd milk chilling centres in Galle, Matara, and Hambantota districts of the Sri Lanka’s Southern Province to evaluate the pH, titratable acidity (TA), specific gravity (SG), composition, milk instability, and the presence of adulterants using standard procedures. When comparing the milk from Hambantota to the milk from the other two districts, the mean total solids (TS) and solid non fat (SNF) percentages were found to be significantly (p<0.05) higher. The TS and SG of Matara district milk were lower than the national averages for cow milk. Milk titratable acidity was found to be normal and within accepted ranges. Only 17.95 per cent of milk samples tested positive for detergents, but not for any of the other adulterants. The highest percentage of milk samples failing alcohol and clot on boiling (COB) tests were found in Hambantota, followed by Galle and Matara. It is recommended that novel rapid techniques be used in routine quality assurance throughout the dairy value chain to detect milk adulteration.
